Harumi's Potato Salad

Potato salad is a regular comfort food with simple ingredients. I must admit that I often find it difficult to cook the potato just right. It is either too hard or too soft and I don’t really have time to check the potato boiling in the pot until it is well cooked but not over cooked. I notice that many restaurants even in big hotels also have the same problem with the potato texture.

สลัดมันฝรั่งเป็นอาหารธรรมดาๆทานง่ายเป็นที่ชื่นชอบของคนทั่วไป มีส่วนผสมไม่กี่อย่าง แต่ต้องยอมรับว่าทำยากตรงที่เนื้อมันฝรั่งต้องมีความพอดี ต้องไม่แข็งกรุบหรือนิ่มจนเกินไป เวลาต้มมันฝรั่งฉันไม่มีเวลามาทดสอบเนื้อมันฝรั่งว่าสุกได้ที่หรือเปล่าทำให้บางครั้งดีบางครั้งก็ไม่ลงตัว เคยไปชิมสลัดมันฝรั่งหลายที่แม้กระทั่งตามโรงแรมใหญ่ๆก็เห็นเขามีปัญหาคล้ายๆกัน

I found this quick and simple recipe by the Japanese Chef, Harumi  Kurihara and I tried cooking with her methods. I must say that it revolutionized the way I cook and eat potato salad. In this dish Harumi does not boil the potato. She soaks it for 10 minutes, and drains it well. Then she puts them in a bowl, cover the potato with paper towel and plastic wrap before heating in the microwave for 5-6 minutes.

ฉันไปเจอสูตรสลัดมันฝรั่งง่ายๆของฮารุมิ คุริฮาร่าเชฟสาวชาวญี่ปุ่นเลยมาทดลองทำดู ขอบอกว่าเป็นการปฏิวัติวิธีการทำและรับประทานสลัดมันฝรั่งของฉันเลย ฮารุมิไม่ต้มมันฝรั่งในสูตรนี้ เธอเอามันฝรั่งไปแช่น้ำ10 นาทีแล้วเทน้ำออก หลังจากนั้นก็เอาชิ้นมันฝรั่งไปใส่ในชามอ่างรองและปิดด้วยกระดาษซับความชื้นที่ใช้ในครัว จากนั้นก็ปิดด้วยฟิล์มพลาสติก นำเข้าเตาอบไมโครเวฟ อบประมาณ 5-6 นาที

The potato comes out exactly as it should be for potato salad.

มันฝรั่งจะออกมาเนื้อแน่นนุ่มกำลังดี

There are also other interesting techniques in the same dish. One is salting the cucumber, let it rest then squeeze the excess juice out making the cucumber the crunchy component in the salad. The sliced onion is also soaked in the water. I find the onion flavor mild and the texture crunchy as well.

ยังมีเทคนิคในสูตรนี้ที่น่าสนใจอีก เช่นการเอาแตงกวาญี่ปุ่นที่หั่นแล้วไปคลุกเกลือให้น้ำในตัวซึมออกมาก่อนที่จะบีบด้วยมือออกจนน้ำงวดทำให้แตงกวาไม่ชื้น แตงกวาจะเป็นส่วนหนึ่งของอาหารจานนี้ที่กรอบ หอมหัวใหญ่ก็ต้องเอาไปแช่ พอเอาไปแช่แล้วรู้สึกว่ารสชาติไม่เข้มมากและคงความกรอบเช่นกัน

It is a delicious recipe and I think everybody will agree.

Dream Home: Senteurs d’Angkor (Scents of Ankor)

Here is another beautiful traditional style house in Cambodia. It is not so much a house but an open-studio/boutique producing and showcasing aromatic products. The house is on the main road of down town Siem Reap. Look at the eye-catching sunny yellow exterior.

บ้านหลังนี้อยู่ที่เขมรเช่นเดียวกับบ้านหลังที่แล้ว จะเรียกว่าบ้านก็คงไม่ใช่ซะทีเดียวเพราะเป็นทั้งสตูดิโอเปิดให้เข้าชมและบูติกขายสินค้าเครื่องหอม บ้านนี้อยู่บนถนนใหญ่ในเมืองเสียมราฐ สีเหลืองสดสว่างสะดุดตา

Instead of having a lawn in the front garden, they have mini patches of rice paddy. At one end is a café and another, a working area for dyeing and weaving palm leaves. Again, the rich colors.

At the back of the house, there is a demonstration garden of the herbs and spices that provide ingredients for the products. There is a side staircase leading to the storing and packing department. The place is airy and cozy.

Downstairs is the boutique. By the time I reach the boutique after the trip around the house, I am convinced that the atmosphere really adds value to the products. And……I would really like to have a house like this.

Japanese Paper Clay

For something instantly satisfying and not so taxing on effort, Japanese paper clay is my craft product of choice. You can make any shape you wish are they can be air dried over night.

I wanted to make some mobiles out of organic forms. When I say organic forms, I mean, these are like kindergarten projects.

A Little Book

I never meant this blog to be political but I do believe that this blog could reflect something in which we deeply believe as a couple.

Michel brought this tiny book home one day after a big office clean-up. He has kept this book with him for a long time.

ฉันไม่อยากให้บล็อกนี้เป็นบล็อกการเมืองแต่ฉันเชื่อว่าบล็อกนี้ควรจะสะท้อนความคิดเบื้องลึกและความเป็นเราสองคนได้

มีอยู่วันหนึ่งมิเชลเอาหนังสือขนาดจิ๋วเล่มนี้มาไว้ที่บ้านหลังจากทำความสะอาดออฟฟิศครั้งใหญ่ หนังสือเล่มนี้อยู่เคียงข้างมิเชลมานานมาก

This book is now on our little pedestal.  A bit like the democracy monument.

It is a copy of the Declaration of the Rights of Man and the Citizen written and proposed by the Marquis de Lafayette for the people of France in 1789. It contains the essence of the constitutions of France. Constitutions can be written and re-written by different groups of people using many colorful technical terms. However, the philosophy remains the same as always because the human needs for respect is universal.

Torrential Rainfall

We had been waiting for the flame trees in our backyard to bloom in April. It is early May and we are still waiting. When they bloom they can be quite overwhelmingly gorgeous.

เรารอดูดอกหางนกยูงหลังบ้านออกดอกตั้งแต่เดือนเมษา เข้าเดือนพฤษภาแล้วยังไม่มีดอกเลย เวลาหางนกยูงออกดอกจะดูสวยคุ้มค่าการรอคอยมาก

The good news is, nearly every other flowers are blooming.

ยังดีที่ต้นไม้ชนิดอื่นออกดอกกันเกือบหมดแล้ว

The rain starts early this year in Khao Yai. When it rains it pours. The volume of water fills our underground reservoir almost immediately. Global warming has meant that we get torrential rainfall too soon and every time this happens, there is a river formation. You see, we live on a small hill. The front of the house is higher than the back. We see so much water going in all directions carrying with it, the top soil. Erosion is our main concern at the moment. So is the concern about the gutter being may be just a little bit too old to bear the weight of the water and dead leaves.

On Saturday night around midnight, we woke up to the sound of thunder and rain. It was as close as we could imagine elephants stampeding- loud and powerful.  Early on Sunday, ants made many trails of caravan carrying insects and whatever scraps of food they could find. These ants are quite vicious. They bite violently and make the dogs jump with pain. You cannot chase them away by any means beside killing, you have to wait for an hour or two before they disappear by themselves. By mid morning the sky became dark. Then it rained again- strongly.

ตอนคืนวันเสาร์มีฝนฟ้าคะนองอย่างหนักจนเราสะดุ้งตื่น เสียงฟ้าร้องและฝนชะหน้าดินดังมากจนเรานึกถึงช้างกระทืบเท้าเวลาโกรธ- ดังสนั่นสะเทือนไปทั่ว เช้าตรู่วันอาทิตย์เราเห็นมดย้ายรังเป็นกองคาราวานหลายสาย มดงานแบกซากแมงเม่ากับเศษอาหารเป็นเสบียง มดพวกนี้น่ากลัวมาก กัดเจ็บ ถ้าหมาหย่อนตัวลงนอนสุ่มสี่สุ่มห้ามีหวังกระโดดเด้งไม่รู้ตัวด้วยพิษมด ถ้าไม่อยากฆ่ามดจะเหนื่อยใจเพราะทำยังไงมดก็ไม่ไปง่ายๆ ต้องรอเกือบสองชั่วโมงกว่ามันจะไปเอง พอสายๆหน่อยฟ้าเริ่มมืดครึ้ม แล้วฝนก็ตกลงมาอย่างแรง
